It must be something about studying for exams, or the hint of spring in the air (the hint that is apparent despite it being 48 degrees and cloudy), but the past week I’ve been thinking nonstop about travel. You know, maybe — that wanderlust that sweeps you off your feet and leaves you reading random wikipedia articles every five minutes and daydream about wiggling your toes in faraway sands with all your worldly possessions strapped to your back.
To distract myself, I thought I’d share one of my favorite food blogs. It’s full of recipes from Argentina, Colombia, and Brazil… i.e. two South American countries nearest and dearest to my heart, and one that I desperately want to get to. Respectively. (I lived in Argentina my 18th year and did my master’s fieldwork in Colombia.)
While a lot of the recipes are not things I can easily eat these days, the truth is that Colombian food (Argentine food not so much) can be very healthy. Think a lot of plantains and yuca. I may or may not have consumed these, and different variations of these, daily this past summer.
Alas, I think it would be cruel to tempt you with a pandebono recipe and nothing else. Can’t promise this will be AS delicious, but I can promise it’ll be satisfying and low-FODMAP, auto-immune protocol friendly.
Asian-y meatball soup:
8 cups of homemade broth
1 2-inch knob of ginger, grated
2 cloves garlic, minced
2 tbsp fish sauce
1 lb good quality/humane (grass-fed, pastured etc) ground meat
a bunch of green onions, chopped and washed
(1) Heat up the broth on the stove.
(2) Mix the garlic, ginger, 1 tbsp of the fish sauce, and the meat together. Form into little balls. Go big or go small… your call.
(3) When the broth is simmering, add the meatballs.
(4) Simmer until meat is cooked through. Throw in green onions and remaining tablespoon of fish sauce (to taste — could be more or less depending on the brand you use).
